Wrapper’s Delight

Cayman closes up shop on Sundays.  When I first got here, I complained about that.  But no more.  If nothing is open on Sunday, then you’re forced to do ‘nothing.’  And if you’re like me and don’t have cable TV, this means you get to be creative.  Diving, salsa dancing, volunteering for Cayman Wildlife Rescue, making your friends perform in music videos, eating. The possibilities are endless…unless you forgot an important item for tonight’s dinner.  In that case, you’re out of luck cause the grocery store is closed!

If you play your cards right, you’ll get invited for a social gathering.  One of my ‘go-to’ snacks is a cold chicken-bacon wrap.  It’s always a real crowd-pleaser and is super simple to make. The recipe calls for a bagged, precooked chicken thingy, kinda like tuna? We don’t have it here so I have to cook my own chicken.  I go for steaming because I like using my bamboo steamer.  It’s pretty.

Once the chicken is finished, you toss in some cream cheese, salsa and lots and lots of bacon (if you’re me.)

Bleh, that’s kind of gross.  I assure you though, its better than it looks.

Drop the mix in a few tortillas and chill.

Voilà! Easy, yummy party snack.
Southwest Chicken and Bacon Roll-ups adapted by Parsley Sage from Cooking in Style the Costco Way
You will need:
1 cup garden vegetable cream cheese, softened
3 cooked chicken breasts, shredded
1/2 cup precooked bacon bits
1/2 cup salsa

6 flour tortillas

  • In a bowl, mix the cream cheese, shredded chicken, bacon and salsa.
  • Spread mixture into tortillas.  Once rolled, wrap in plastic wrap and stick in fridge for at least three hours
  • To serve, slice into one inch, bite-sized pieces

  3. That sounds wonderful. I wish things would shut down here once in a while. The only time it happens is when we get snowed it, but that's no fun either.

  4. Isn't is wonderful when there is a day that everything is closed and you have every right to do nothing or find something else awesome to keep you busy? In Israel everything closes sundown Friday night to sundown on Saturday. Its my favorite time of the week and usually when I have dinner parties to try out my new recipes on all my husbands med school classmates 🙂
