I had my first swanky during Gimistory a few years ago.
Gimistory is a storytelling festival held annually in Cayman. A different island district hosts each night and Clark Kent and I try to make it to the West Bay one each year. In addition to stories, poetry, ex tempo, calypso and duppy (ghost) tales there’s a food competition to find out which district has the best fried fish & fritter and the best swanky.

You will need:
6 cups of water
1 cup lime juice
2 tsp honey
1 cup brown sugar
PS. Might I suggest adding rum if you’d like to ‘adult’ this up a bit 🙂
