Pumpkin Dump Cake

Oh boy! There’s no holiday I get more excited about than Halloween. Imagine my disappointment when I moved to Cayman 5 years ago and discovered they didn’t really do it! GASP!
This didn’t stop Clark Kent and I from carving pumpkins…

Got to break in two first timers too: Norma and SammyΒ (who’s supermom made those badass skelehands!)

…and dressing up.

Zombie cheerleader, Clark Kent (big shock), Dr. and X-Ray Machine, Paul Bunyan and Babe the Blue Ox

We even forced…er…um, persuaded our friends to join us in the Halloweening.

The good news is, Halloween is picking up in popularity. Β The bad news is…CK has to wear tights this year. Β Don’t worry. Β There willbe photos.

 

Pumpkin Dump Cake from Prep for Success by Cayman Prep & High School
You will need:
1 (15 oz) can pumpkin
1 (12 oz) can evaporated milk
4 eggs
1 cup sugar
1 tsp ground nutmeg
1 tsp ground ginger
1 tsp ground cloves
2 tsp ground cinnamon
1/2 tsp salt
1 pkg yellow cake mix
2 stick butter, melted
1 cup chopped pecans
  • Preheat oven to 350 F
  • Grease and flour a 9 x 13″ pan
  • In a large bowl, stir together the pumpkin, sugar, salt, nutmeg, ginger, cloves and cinnamon
  • Stir in the milk, then beat in the eggs one at a time; pour pumpkin mixture into prepared pan
  • Sprinkle the yellow cake mix over the pumpkin mixture, then sprinkle on the pecans
  • Drizzle melted butter all over the top
  • Bake in over for 55 minutes, or until the edges are slightly brown
  • Allow to cool before serving

  14. yeah! Who said Halloween is for the kids!?! I am now inspired to carve a cool pumpkin. So great that everyone is getting into it and having a great time. It's a shame that the kids at the school I work at can't dress up like we could when I was a kid. I think the parents are trying to get rid of Halloween, but it's not working!! I love it too!

    The dump cake is perfect and looks so yummy!

  22. I love it when adults have more fun than the kids during Halloween, as you guys obviously did, and probably will do every year until you have kids! Then you've got to share some of the fun with the young ones :-). That recipe title threw me off, be after reading through it, the cake sounded like it was really, freakily delicious!

  49. HAHA–I love the Paul Bunyan and Babe the Blue Ox costumes. I have pumpkins all ready for carving just sitting here. WE haven't gotten around to it yet. Maybe this weekend. Otherwise, we'll have carved Thanksgiving pumpkins.

  54. How cool is it that you have started getting folks to celebrate halloween in the Caymans! The pumpkin carvings are great-love the skeleton hands. With all this fun going on-who wants to spend a lot of time in the kitchen-this the perfect treat to whip up and not miss out on any of the festivities. They look delicious! Ha-your husband is a real sport if he allows you to post him wearing tights. Have a great halloween!
