Yo ho, yo ho, a pirate’s life for me!

The pirates landed on Saturday and the Red Coats were no match for the knaves who promptly kidnapped the Governor!

Never fear though, as each district hosts a day of traditional foods and all things old timey Cayman, the good guys have been plotting.  Those naughty pirates go on trial tomorrow and I guarantee they’ll be swinging from the gallows by nightfall.

Pirates Cake, adapted from What’s Cooking in the Cayman Islands

You will need:

1/2 lb seedless raisins
1 eggs
2 cups flour
1 cup sugar
1 cup boiling water
1/4 cup coconut oil
2 tsp baking soda

  • Combine water, raisins and baking soda.  Let soak 1 hour or until raisins become puffy.
  • Pre heat over to 350F
  • Beat eggs and sugar together
  • Add oil and flour
  • Stir in raisin mixture and beat well
  • Pour into muffin tins and bake for 15 minutes
  • Makes a dozen
