Eggplant Stir-fry

Some of you may have noticed this little beauty in the Agriculture Show post from last week.  I’m sorry to report that my eggplant’s health is flagging.  Boo.  But I have managed to get one beautiful and delicious veg off the vine so far.  Hopefully, it won’t be the only one.  Suggestions welcomed!

Eggplant Stir-fry
You will need:

1/2 large eggplant, diced with the skin on
5 mushrooms, chopped
1 scotch bonnet, whole
1 tbsp minced garlic
1 tbsp sun-dried tomato paste
2 tbsp olive oil (I used a special lemon version…so good!)
2 sprigs of fresh thyme
1/4 cup water for the stir-frying

  • Heat up oil in a pan over medium high heat
  • Add garlic, eggplant, scotch bonnet and mushrooms
  • Stir fry for about 5 minutes, adding the water any time the pan starts to get dry
  • Add tomato paste and continue cooking until eggplant is soft and almost translucent
  • Season with thyme to taste (and maybe a bit of salt too if you’re into that)
  • Serve over rice or noodles

  4. MMMM, I love eggplant! This looks great.
    I tried growing an eggplant last year but either the rabbits ate the little plant. Good luck and yes I am jealous of year round gardening. That was how I started growing veggies.

  14. ah yes,.. my tomato plant died too, leaving 3 tiny tomatos orphans after being featured in a tomato soup poste of mine. lol

    Hadnt tried to grow aubergine, maybe I should!

  16. Managing to grow one eggplant is more than I could ever imagine! Each spring I plant a vegetable garden and it inevitably falls short. I love this stir-fry though! I've never used an eggplant in one before. Bookmarked to try 🙂

  28. I wish I could give you some egg plant pointers but I have never even tried to grow them. We are hopefully going to start some of our own veggies this year and Im pumped. This stir fry looks awesome – I love that its quick easy and healthy.

  29. Stir fry looks perfect to me. And your veggie on the vine. I do not have a green thumb, killed many vegetables when I tried so my advice is to ask someone who knows what they are doing:)

  30. Congrats on growing such gorgeous vegetables. this one is perfection, we make eggplant in stir fry once a week, actually made it last night… I will try it with the tomato in it next time sounds good, I just love it with peppers, zucchini and broccoli… this looks delicious!

  38. Sorry to hear about your eggplant but at least from the looks of this recipe it tastes great so it could have been worse. Great recipe and with added flavors that make these chunks of eggplant pop in your mouth.

    I wish I could offer some gardening advice but I'm convinced I have a black thumb.

  47. you will get more eggplants from that one plant. I am not a gardener of vegetables but as a hobby I plant few colorful vegetables.
    The eggplant stir fry taste great with the herbs .

  49. This looks too good–I have to try this, since we stir-fry often. I have the lemon olive oil, so it'll be good to use it–and maybe a touch of garlic oil too. Yum!

  57. Yes to eggplants and this recipe. We eat plenty of eggplants but mostly into curried style. This recipe will be another try for me.

  58. Perhaps GENTLY transplanting it into a MUCH larger pot, it could be root bound and struggling to keep the one fruit alive. Be sure to put some rocks in the bottom of the pot to promote drainage just like you did at home. Set it in the sunshine and cross your fingers. Your dish looks yummerific! Love you.   59. Sorry, I have a hard time keeping herbs alive, much less a fruit-bearing plant. I got one lousy tomato off my tomato plant last summer, and I had a zucchini plant that gave me nothing–that's right. Nothing–a few years ago. I'm no help. That's a nice looking eggplant, though, even if it's the only one!
