Having dinner with one of your mates is the best fun. Its even better when the food is great. Throw in a two for one special and its a food perv party! My buddy Prathna is taking the plunge ‘back home’ in May, giving all of her friends in Cayman an excuse to fly to London to be a part of the celebrations. Needless to say, she’s living on a pretty tight budget right now so getting her to go snarf with me is difficult. I did manage to sway her when I whipped out a ‘two for the price of one’ coupon I got from Chef Matthias at Deckers.
Now, you might remember Matthias from his show-stopping chilled banana soup
from the Soup-er Bowl. I still have warm, fuzzy feelings about that soup so, of course, it was my starter for the evening. Prathna went with the special which was a locally caught Corvina ceviche which packed a tangy and citrusy flavor that was well received by all.
Moving on, Prathna’s main course was Cajun Mahi Mahi with warm purple potatoes, edamame salad and piperade in a butter fondue. The veggies on this dish were spectacular! The fish…less so. It could have used a little more seasoning and according to Prathna it was ‘slimy.’ My entree on the other hand was worth writing home for. I had the pork tenderloin with bacon (big shock, right?) which was served over mango glazed BBQ pork ribs and roasted fingerling potatoes. Outstanding.
Dessert was another winner: Granny Smith apple crumble with butterscotch and chocolate ice cream. The tart was moist and delicious and caramelized apples in the upper right part of the dish were crisp and tangy.
