Fritters are my favorite Caymanian side dish. Β In February, my friend Alejandro shared his fried barracuda and fritter recipe on Deep Dish. Β Today’s fritters are slightly different, incorporating creamed corn into the dough before it gets fried. Β They’re delicious, but they may be a little boring for the more adventurous among you. Don’t be afraid to get a little wild with your seasoning.

Cayman Corn Fritters
Print this recipe

You will need:
3 cups sifted all purpose flour
1 (17 oz) can creamed corn
1 cup corn oil
1 egg, slightly beaten
2 tsp baking powder
1 tsp salt

  • Combine flour, baking powder & salt
  • In a separate bowl, mix corn and egg: add to flour mixture, stirring lightly
  • Heat corn oil in large heavy skillet over medium heat
  • Drop batter by tbsp into hot oil
  • Fry about 1 minute on each side until golden brown
  • Drain on paper towels
Makes about 24 fritters (depending on how big you make them)

  20. Mmmmm! Corn fritters are my favorite. I've never made them at home before. Have you ever added minced jalapeno or green chiles to them? Yum!

  27. I don't think fried barracuda fritters would be boring at all- I think it is quite creative. I probably should not admit that I did not realize that barracuda were a eating fish. Very cool.

  44. Ooh, awesome! The recipe is so simple and yet, delish! I'd love to add spices to it, too. I love that you only fry in about a cup of oil. I'm going to do that since I hate filling up a pot with oil and then I don't know what to do with it all after I'm done, haha.

  47. These look really gorgeous! I am liking the suggestions of dipping sauce and cold beer. Parsley Sage, the little shell in the picture makes me think of the seaside. I am imagining a scorching hot day, and a very happy me, strolling along the beach, with a carton of these bad boys.

  51. Oh, how I love fritters! But I've never actually made them myself. The only time I fried something (years and years ago) it turned into a mushy, yucky mess. Maybe though… this has me motivated! Love the corn! Buzzn' ya back!!
