Coconut Banana Bread

I screamed like a little girl last night for the first time in my adult life.

I’d just gotten home from the gym and was shower-bound. Β At my most vulnerable moment – clad in naught but my long tresses – I reached up to pull back the shower curtain and guess who was 4 inches from my face.

There is no segue. Β I’m too traumatized.

Coconut Banana Bread fromΒ Miss Cleo’s Cayman Kitchen

You will need:
1 cup butter
2 cups sugar
4 large eggs, beaten
2 cups mashed very ripe bananas (that’s about 10 apple bananas or 5 regular ones)
2 1/4 cups flour
1 tsp salt
2 tsp baking soda
1/4 tsp nutmeg
1 cup grated fresh coconut

  • Preheat oven to 350 F. Β Lightly grease and flour 8 x 4 x 2 inch pans (I used a bundt pan.)
  • In large mixing bowl, cream the butter and sugar until smooth, then slowly add eggs and bananas
  • In a small bowl, combine the remaining ingredients
  • Add to the banana mixture
  • Mix until batter is blended making sure not to over beat
  • Spoon batter into prepared pans and bake 55 – 60 minutes (40 – 45 for bundt pan) or until toothpick comes out clean
  • Cool for 5 minutes and transfer to wire rack

    OMG, you would hear me screaming all the way in Brooklyn if I saw one of those in person, while naked no less!! Water bugs are bad enough… I would be traumatized as well.

  14. OMG, I do not know what I would do other than shriek. I've never seen a scorpion in person (knock wood), but they scare me. On a more positive note, that bread looks moist and luscious.

  17. I would have absolutely freaked. I opened up the door of the staff bathroom at school to find a scorpion…last year…and I've been too freaked to use that bathroom since! One thing I definitely will not miss about life in the desert is bugs. I hope you haven't seen that guy since! PS: I love this banana bread! I am on an absolute coconut kick lately, and this is the perfect way to continue it πŸ™‚

  20. I would have flipped out and I'm not ashamed to admit it. Last time I was in the Philippines my cousin thought it would be funny to throw a giant cockroach in the shower with me…yeah, not good. That being said, that coconut banana bread looks super yum πŸ™‚

  24. Holly Macaroni! I hate finding bugs in the house. I know they are all useful for something but NOT in my house!
    So what did you do? I would scream too! We have our share of big cockroaches in the South,I scream everytime I see one. I normally empty a can of Raid on one of them , we usually have to air the whole house and leave the house to be able to breathe when I am done.

  29. Ah yes, I can sympathize. Now that we're living in Thailand, I have found some little critters grazing around too…it always freaks me out! At least you were able to console yourself with this great bread. I'd love to try it, especially since fresh coconut is plentiful here!

  31. I empathise – I almost stepped on a scorpion once walking up an unlit corridor from the lounge to the loo. The only way I missed it was it wiggled at the last second before I put my foot down, and my eyes caught the moving outline. I've been terrified of scorpions ever since!

    The banana-coconut bread combo looks delcious. I've never tried nutmeg in a banana bread before…only cinnamon.

  34. Who could think about banana bread when you could have been bit by a scorpion! Gee wiz I don't think I could sleep for months. As it is my dogs have been carrying ticks – found one on my bed the other day and I'm having trouble sleeping and itching all night.

    Well I guess you've got to eat and coconut banana bread sounds pretty darn good and moist. I make banana bread all the time. Saving the recipe to try with my next batch of ripe bananas.

  36. I have never even seen a real scorpion considering I'm an Aussie Sydney girl but I get my fair share of spiders – and my parents call me a drama queen!!

  37. What a fright! Finding a spider in my shower doesn't compare, although I would put up with a lot I think to live in the Caymans!
    I also think coconut would go a long way to make a banana bread lover of me.

  39. I guess they are getting friendly your way as well. My husband found one crawling into my shoe yesterday.
    This sweet bread does look like a tasty diversion from that. Yet, your thought is probably the same as mine, if there is one, where are the rest? The scorpion paranoia will take some time to get over. Have a fun and scorpion free weekend!

    Beautiful and simple banana bread. My kind of recipes are those easy yet with a wonderful outcome.

  42. I'm traumatized for you! I probably would have passed on the spot, those poor paramedics that would have to come to revive me and see that scene. I think the banana bread was an excellent recovery.

  45. I was bitten by one of those things when I lived in Florida. I was out at the back of the yard and I nearly didn't make it to the house for the pain. I was a drama queen and quite sure I was going to lose my foot. πŸ™‚

    My neighbor dashed over with meat tenderizer and within 45 minutes I wouldn't have known I'd been bitten. Keep some in the house.
