Cayman Custard Topped Cornbread

For three years, Clark Kent and I volunteered with an organization called Cayman Wildlife Rescue.  We spent a few weekends a month taking care of injured, recovering and domesticated Cayman Parrots.  Unfortunately, the group lost its funding as a result of the global economic slump.  Since then, CK and I have been volunteers without a home.  Until now!

We had a blast scrubbing puppies at last weekend’s Community Dog Wash hosted by Cayman Animal Rescue Enthusiasts.  Over 30 dogs received spa treatments and many got appointments to be spayed and neutered!

We were, of course, thoroughly soaked when we got home and more than a little exhausted.  Luckily, I had earmarked this easy (and delicious) post-doggie-wash treat as a ‘yay-us!’ reward for our good deed 🙂

Cayman Custard Topped Cornbread from Prep for Success
Print this recipe

You will need:
1 cup cornmeal
1 cup all purpose flour
2 cups brown sugar
1/4 tsp salt
2 cans of coconut milk combined with 3 cups of water

  • Preheat oven to 350F
  • In a large bowl, combine dry ingredients then very slowly add coconut milk, mixing as it is added
  • Pour into a greased or sprayed 8 inch baking dish
  • Bake 1 and a half hours, center should still be jiggly when done
PS.  This guy is more than a little gooey. Almost like a cassava cake so don’t be surprised when you start cutting

  5. Aaaaww, love your little doggie friends. I've was craving cornbread so I came over to behold this for myself. I'm guessing this tasted like a combo between flan and cornbread, yum. Going to the store later, I think I need some coconut milk. Sounds like you guys are doing well over there.

  16. Being from the South, cornbread was always a little sweet; but never eaten as dessert. Last summer, I tried a cherry cornmeal cake and my eyes were opened to the possibilities. This looks fantastic!

  19. Love that you did a community dog wash! I had your page up and my husband walked in and oohed and ahhed over the picture. Not going to lie it created a little food blogger jealousy but can't say I blame him. It looks great! Congrats on Top 9!

  22. Thanks for posting your cornbread recipe! I've been on the look out for a Cayman-style cornbread recipe for awhile now. I was an expat living in Cayman years back. I have fond memories of one of my Caymanian co-workers, who used to make the most wicked cornbread ever, and would bring it to the office on special occasions. Everyone would devour her cornbread and then beg for the recipe. Problem was, she would never give up her secret recipe. Since moving back to Canada, I miss those cornbread treats and am sure excited to try out your recipe!

  24. This is a new discovery for me because I seldom use cornmeal for my cooking. I am sure whether how easy it will be for me to cornmeal over here but when I get my hands on it, gonna try this recipe of you. The topping all the more looks so perfect together.

  33. Love the pics of the pups!!! But much as I love the dogs, that custard cornbread is divine. We've made something sort of similar, or actually a neighbor did, but it was all with heavy cream and I felt guilty with every bite. The coconut milk in this one has me sold!

  35. I remember seeing the big friendly birds everywhere when I was in Cayman. I think its so sweet that you help out with the rescue! And puppy wash – Marble will be in line waiting for you. He always looks soooo sad whenever we bathe him.
