Caribbean Curry Chicken

What a fantastic event!  We just got home from a week in England and a simply breathtaking wedding.

I’m so happy for Prathna and Alejandro, who are currently safari-ing in Botswana for their honeymoon (those dawgs!) Clark Kent and I were honored to be included and were absolutely blown away by the rituals, colors, traditions and food that were showcased in their wedding.  Not to mention, Prathna has one of the coolest families in the entire world.  Outstanding all around.

Now we’re back in Cayman and still hungry for Indian.  We decided to settle on some curry chicken and roti, that’s a bit more Trinidadian than Indian but it tastes just as good 🙂

Caribbean Curry Chicken

You will need:
2 lbs chicken, cubed
2 tbsp Grace Caribbean Tradition curry powder
3 cloves garlic
3 green onions
1 sprig thyme
2 oz cooking oil
1/2 to 1 cup water
Salt & Pepper

  • Mix curry powder, crushed garlic, sliced onion, thyme and salt & pepper with chicken
  • Marinate 15 – 30 minutes or overnight for best results
  • Heat oil in skillet, add meat, saute 5 minutes
  • Add water as necessary to meat and simmer until cooked
Serve with rice, steamed veggies or – in our case – roti skins.I also just wanted to thank everyone for all the support and prayers and happy bunny thoughts for my mom!

  7. MMh, caribbean chicken curry. Those roti look great. I love how those curries are so comparitively light on ingredients too. SO easy to knock something quick but really tasty at the end of a busy day/week/wedding!

    Indian weddings are always colorful and filled with traditions which are really interesting (it is a different culture altogether), and their food, one of the most exotic cuisines, and trust me when I say that it's always spices, spices and spices…they really love HOT HOT and spicy food:D
