Apple Banana Eggs

Clark Kent and I don’t have any lumpies of our own yet but we’re lucky enough to have some of the cutest darned kids ever in our lives.

The pumpkin-butt on the bed with me is actually here right now! ย He’s brought mum and dad to Cayman for a few days of rest, relaxation, sun and sand…and, of course, food!

Apple Banana Eggs
Print this recipe

You will need:
3ย apple bananas, peeled and mashed
4 eggs
2 tbsp of coconut milk
1 tbsp of sugar
2 tbsp powdered sugar
1/2 tsp salt

  • Beat eggs until light
  • Add other ingredients, except powdered sugar, and mix well
  • Pan fry slowly over medium-low heat until set; scramble with fork
  • Place on platter and sprinkle with sugar
Those binky fruits under the flower are apple bananas

You've moved house, been to Thailand (you should've visited me, I'm so close!)and now you've borrowed some lumpies to make breakfast for. I've had apples but not bananas with my scrambled eggs and certainly not apple bananas. I want me some of this, and a few lumpies too, pleaeeease…. ๐Ÿ™‚

  7. Thanks for explanation about Apple Banana Clark Kent! I've never seen this before. We can still replace it with regular banana? I never cooked eggs with fruits! This is so kids friendly recipe that my daughter who does not like scramble eggs (she eats other types of eggs) may eat the whole thing! I am looking forward to tasting eggs and coconut milk flavor too.

  8. Maybe it would help if PS added a photo, but apple bananas are shorter, squatter versions of bananas. They grow on trees that look like short palm trees. They are the same consistency as bananas, but have a tart or tangy taste. Check this site for more info.

  9. I've never heard of Apple Bananas. I kept looking to see if you forgot to put a comma between the two words. What do these taste like? Apples and Bananas? What color is the skin? I'm so curious.

    I just love how so many of the foods you prepare use coconut milk and look at you so skinny. I guess you can't believe everything you read about coconut milk. I have to say I love the stuff and anything that tastes like coconut.

    Your eggs sound wonderful. I don't have Apple Bananas but next time I make scrambled eggs I'm definitely using coconut milk in them.

  11. I've never hear of apple bananas…is it a cross between an apple and a banana? Too bad you didn't post a photo of what it looks like!
    The little tots are sooo cute! I bet the scrambled eggs were “kids approved”…not sure if I would want to try it, but perhaps, our “little guy” in our family would:DDD
